Sauteed Mushrooms

I love mushrooms because it has a natural meaty flavor. It's very yummy even if you just simply saute it.

Ingredients:
1/2 kilo mushrooms
3 cloves garlic
4 tablespoon soy sauce
spring onion


Procedure:

1. Slice the mushrooms then wash and set aside to remove extra water
2. Saute the garlic then add the mushrooms and saute for a minute.
3. Add the soy sauce then continue to saute for 3 minutes or until done.
4. Put some spring onion, then mix well and serve it hot.


Pastel de Lengua

Tasty, juicy and creamy is what I can described for this beef tongue recipe. So perfect with steamed rice and the meaty and nutty  taste of the tongue will make you crave for more Try this easy to make recipe.

Ingredients:
1 beef tongue ( or pork)
2 big potatoes ( sliced)
3 cloves garlic
1 onion
1 big carrot ( sliced)
1/2 cup sliced mushrooms
1/2 cup Nestle Cream
1 cup water
salt and pepper to taste

Procedure:
1. Clean the tongue then boil until tender.  Slice to your desired thickness.
2. Saute the garlic and onion then add the sliced tongue, salt and pepper then continue to saute for 2 minute, then add the water and simmer.
3. Add the potatoes then stir well, let simmer until half cooked, then add the carrots and mushrooms, simmer until cooked.
4. Add the Nestle cream and simmer for a minute then turn off the heat.
5. Serve it hot.

In the book I found a delightful classic scallop carpaccio dish that I knew my husband would be happy to come home to. It was so easy to make.  I was right, my husband loved the dish. Enjoy!

Scallop Carpaccio Salad
serves 2

4 sea scallops
salt
1/2 Tbsp fresh squeezed orange juice
Juice of 1/2 a lemon
1/8 cup extra virgin olive oil
1 Tbsp slivered almonds, toasted
1/2 Tbsp capers
1/2 Tbsp finely chopped fresh chives
1/2 tsp fleur de sel
micro greens

Place the scallops on a baking sheet lined with wax or parchment paper. Cover with plastic wrap and place in the freezer for one hour. (I know you don't want to freeze amazing scallops, but this is only done so you can cut them super thin, do it, you won't be sorry. )

When the scallops are almost hard, remove them from the freezer, and with a sharp filleting knife, carefully cut the scallops width-wise into paper thin slices. Divide them between 2 plates. 

In a medium bowl whisk together a pinch of salt, the orange juice, and the lemon juice. Slowly add the olive oil, a bit at a time, and continue to whisk until you have an emulsified vinaigrette. 

Place micro greens on the plates with the scallops. top with almonds, capers, chives, and fleur de sel. Drizzle the vinaigrette over and serve. 

Bread Cup Pizza

A simple treat that taste great.

Ingredients:
10 bread slices
5 hot dog ( sliced  slantingly)
1 cup shredded mozzarella cheese
1 onion ( sliced into rings)
1 1/2 cups tomato sauce
1 teaspoon sugar

Procedure:
1. Remove the sides of the bread, then press it unto muffin cups and bake in a pre-heated oven for 3 minutes at 180C. This is to harden the bread and have a crusty texture.


2. Mix the tomato sauce and sugar, then spread it over the baked bread, put the sliced hot dog, onion and sprinkle with cheese.

3. Put back in the oven and bake for 5 minutes or until the cheese is melted. Serve it with a smile.

Braised Shrimps


A succulent shrimp bits recipe that goes well with steamed or fried rice. Easy to cook too.

Ingredients for 5 servings:
1/2 kilo shrimps ( cleaned and chopped)
1 onion ( chopped)
3 cloves garlic ( chopped)
1 tablespoons lemon or calamansi juice
1/2 piece bell pepper ( chopped)
salt and pepper to taste

Procedure:
1. Saute the garlic and onion then add the shrimps and all the remaining ingredients then braise over high heat for 2-3 minute then turn off the heat.
2. Sprinkle with spring onion then serve it hot.
