Chicken Spaghetti


I cooked this to add to my spaghetti recipe collection, it tastes so good, try it.

Ingredients for 6 Servings:
1/2 kilo Spaghetti ( cooked according to its packaging procedure)
400 grams chicken breast ( boiled and shredded)
370 grams tomato sauce
3 cloves garlic ( minced)
1 onion (minced)
1 1/2 cup ketchup
1 cup evaporated milk
2 tablespoons soy sauce
2 tablespoons sugar
1/2 cup grated cheese
salt and pepper to taste
extra cheese for toppings


Procedure:
1. Saute the garlic and onion then put the shredded chicken and saute for a minute then add the tomato sauce, ketchup, sugar and soy sauce then simmer for 5 minutes.
2. Add the milk, grated cheese, salt and pepper then simmer until done.



3. Arrange the spaghetti in a platter then top it with the sauce and some cheese then serve with a very BIG smile :-).




Fried chicken wings



Wings are my favorite parts of the chicken, enough skin and bone for me to enjoy while eating :-).

Ingredients:

1 kilo Chicken wings
1/4 kilo all purpose flour
salt and pepper to taste
3 pieces calamansi ( squeezed)
1 egg beaten
oil for frying


Procedure:

1. Combine the chicken, calamansi juice, salt and pepper to taste then add the beaten egg and combine well, set aside.
2. Combine the flour, salt and pepper to taste then roll the chicken on the mixture to be fully coated.
3. Heat the oil then deep fry the chicken wings until golden brown.
Remove from oil and put in a paper towel to remove excess oil.
4. Serve and enjoy.

Braised Chicken

A simple chicken dish but the taste is priceless.

Ingredients for 4 servings:
1/2 kilo chicken
1 onion
3 cloves garlic
2 medium size carrots ( sliced)
4 medium size potatoes (sliced)
2 tablespoons soy sauce
1 cup water
1 teaspoon corn starch dissolved in 1/4 cup water
salt and pepper to taste

Procedure:
1. Saute the garlic and onion then add the chicken and braise until half cooked.
2. Add the soy sauce then simmer for a minute, add the water and simmer until the meat is tender.
3. Add the carrots and potatoes then simmer until cooked, then add salt and pepper to taste. Add the dissolved corn starch to thicken. Simmer for a minute then turn off the heat.
4. Serve and enjoy.

Native Chicken Tinola

Tinolang Manok( Filipino stewed chicken) is one of the popular dishes in Philippines. Green papaya, lemon grass and horse radish are added to the dish to make the flavor perfect.

Ingredients:
1 whole Native chicken ( slice to your desired size)
thumb size ginger( strips)
3 cloves garlic
1 small onion
1 small unripe papaya
2 cups horse radish ( malunggay)
1 stalk lemon grass (tanglad)
6 cups rice washing ( add if needed)
1/4 cup fish sauce (patis) optional
Salt and pepper to taste
Native Chicken

Procedure:
1. Saute the garlic, ginger and onion then add the chicken and braised for few minutes.
2. Add the fish sauce(patis), if there is no fish sauce just put salt and pepper, simmer for 5 minutes to allow the flavors to blend well.
3. Add the rice washing and bring to a boil until the chicken meat is tender. Add the lemon grass and papaya then simmer until almost done.
4. Add the horse radish then simmer for 30 seconds and turn off the heat, then serve hot

Chili leaves can be added too

Binakol


Another Ilonggo's pride is this delicious chicken dish that's rich in taste, cooked in coconut water. If you know how to cook chicken tinola, this is very similar to it, the only difference is this is cooked with coconut water. You can add tinola vegetables for this recipe, mine I only want it this way.

Ingredients:
1 whole native chicken ( chopped to your desired size)
3 young coconut (buko)  coconut and water seperated
2 cloves garlic
1 onion (minced)
2 stalks spring onion
1 stalk lemon grass (tanglad)
salt and pepper to taste

Procedure:
1. Saute the garlic, ginger and onion then add the chicken and braise for few minutes.
2. Add the coconut water and bring to a boil, when boiling add the lemon grass then simmer until the meat is tender, add the coconut meat, salt and pepper to taste then simmer for 5 minutes and turn off the heat.
3. Put the spring onion and serve it hot.



You can add coconut water if needed.

Pinaupong Manok

Pinaupong Manok is a whole chicken cooked in a sitting position, there are various ways of cooking it.  I tried one today and it's good and delicious. Try it.

Ingredients:
1 whole chicken ( around 2 kilos) you can choose the size of the chicken that you will use
1 teaspoon chili flakes (optional)
3 tablespoon calamansi or lemon juice
salt and pepper to taste
2 tablespoon butter
1 can softdrink ( your choice)
2 cloves garlic ( crushed)

Procedure:
1. Sprinkle the juice on the chicken,then rub it with chili flakes, salt and pepper.
2. Remove half of the Coke content then put the garlic and butter inside the can, insert the can at the lower opening of the chicken and set it in a sitting position.
3. Put in the pre-heated oven at 180C and cook for 1 hour or until done.
4. Serve and enjoy :-).

Note: Smaller chicken is faster to cook. So reduce the time when you use a smaller chicken.
