Simple Bibingka With Cheese

A delicious bibingka with cheese that will boosts your appetite when you smell its aroma, mmmmm yummy.

Ingredients for 4 servings:
1 cup all purpose flour
1 egg ( beaten)
2 teaspoons baking powder
3/4 cup sugar
3/4 cup fresh milk
pinch of salt
some cheese for toppings
wilted banana leaves

Procedure:
1. Sift together the flour, sugar, baking powder and salt, set aside.
2.Pour the milk to the sifted ingredients then mix well,  add the beaten eggs and mix  until fully combined and smooth.
3. Put a wilted banana leaves in the molder that you are going to use then fill it with the bibingka mixture up to 3/4 full, and bake for 25 minutes or until done in a pre-heated oven at 180C.
4. After 25 minutes top it with cheese and continue baking for 5 minutes and turn off the heat.
5.Serve with a smile.

Oven Baked Bibingka

Bibingka is one of the most popular dainties ( kakanin) in the Philippines and there are various ways of cooking it. Since It is my first time to cook this, I used the simple way and that is baking it. It is yummy.
Ingredients for 6-8 servings:
2 cups all purpose flour
2 eggs ( beaten)
2 teaspoons baking powder
1/4 teaspoon salt
1 cup sugar
1 1/3 cup fresh milk
1/4 cup grated cheese
wilted banana leaves

Procedure:
1. Sift together the flour, sugar, baking powder and salt, set aside.
2.Pour the milk to the sifted ingredients then mix well, then add the beaten eggs and mix well until fully combined and smooth.
3. Put a wilted banana leaves in the baking pan that you are going to use, and bake for 45 minutes or until done in a pre-heated oven at 180C.
4. When it is done, sprinkle with grated cheese or coconut then serve.

                                         I re-cooked this today using muffin molder.



Puto Ube

Craving for an ube flavored puto but there is no ube in my place :(  I just used the ube flavoring, but still the real ube is the best for this.

Ingredients:
2 cups all purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
20 ml ube flavor concentrate or 1/4 cup ube powder
1 1/2 cup fresh milk
cheddar cheese for toppings

Procedure:
1.Combine the flour, salt, sugar and baking powder then sift it.
2. In a mixing bowl combine together the sifted ingredients, ube flavor and milk then mix very well until the batter is smooth in texture.
3. Fill the puto molder with the batter around 3/4 full then top the cheese and steam for 20 minutes or until done.
4. Let cool before unmolding it then serve it with a smile :-).

Rice Puto

The first puto that I've tasted when I was around 5 years old. Every weekends my older sisters and their bestfriends are always spending time at our house making this puto. That's why it became my favorite, I loved the sweetness and creamy taste in every bite.

Ingredients for 15 Puto:
2 cups rice flour ( giniling na bigas)
3 teaspoons baking powder
1 1/2 cup coconut milk
1/4 teaspoon salt
3/4 cup sugar
Wilted banana leaves ( cut into circles enough to fit the molder with an overlapping allowance)

Procedure:
1. Sift together the flour, baking powder, salt and sugar, then pour the coconut milk into it and mix well, until the batter is smooth in texture.

 2. Put the banana leaves into the molder properly then pour the batter around 3/4 full.

3.Steam for 30 minutes or until done.
4. Serve anytime you want it.

Mely's Kitchen Puto Cheese

This puto cheese is a result of finding out a perfect batter for the puto, I think this one is very good, it's just perfect! I am talking about the batter, because I was not happy with the cheese that's available in my place. I hope you will try this recipe.

Ingredients for 15 medium size Puto:
2 cups all purpose flour
3/4 cup sugar
2 1/4 teaspoons baking powder
1/4 teaspoon salt
2 cup fresh milk
1 beaten egg
1 teaspoon butter (soften)
cheddar cheese for toppings

Procedure:
1.Combine the flour, salt, sugar and baking powder then sift it.
2. In a mixing bowl combine together the sifted ingredients, butter. egg and milk then mix very well until the batter is smooth in texture.
3. Fill the puto molder with the batter around 3/4 full then top the cheese and steam for 20 minutes or until done.


4. Let cool before unmolding it then serve it with a smile :-).




Mely's Kitchen Sticky Rice with Mango


A simple glutinous rice recipe that is good for all occasions. These two main ingredients ( glutinous rice and mango) goes well together.

Ingredients:

2 cups glutinous rice
1/2 cup white sugar( or according to your taste)
2 cups coconut milk
2 mangoes ( slice into batonettes)

Procedure:
1. In a pot combine the glutinous rice, sugar and coconut milk then cover and cook over medium heat, stirring occasionally.
2. When the coconut milk is almost dry, reduce the heat to low then cover and simmer until fully cooked, then allow to cool.
3. After cooling, scoop some rice  then put over a foil and flatten it evenly, then put some mango slices, roll like a sushi.





4. Cut into desired size then sprinkle with crushed cashew nuts or sesame seeds then serve, or you can put some coconut cream before serving.



Note: In cutting this, wet the knife with water so that the rice won' stick and easier to cut.
