How to Cook Pilau Rice



Simple and easy to prepare.
The taste is very nice and spicy, perfect for curries.
Cooked by my best friend, Vince.


Ingredients:
300 grams rice
8 cloves
8 green cardamom pods
1 cinnamon stick
4 star of anise
1 tablespoon butter
a little saffron
4 bay leaf ( laurel)
water

Procedure:
1. Heat the butter and saute the cinnamon stick, saffron, star of anise, cardamom, cloves and bay leaf for few minutes.

2. Add the rice then mix until covered with butter and spices.
3.  Add water that is enough to cook the rice ( like the normal way of cooking white rice)
4.  Cover and mix occasionally until it is cooked.
5. Serve hot with your favorite meat, seafood or vegetable dish.

How To Fry Fish Perfectly

Simple to cook but, some do not know how to fry fish perfectly, that is why  I wanna share this simple dish specially how to cook it perfectly. There's one time that I let my friend fry a fish for our lunch, when she called us to eat,  it can’t be pictured if it is the tail, belly or head :-)  So broken! I said what happened? She said nothing lol this is my style, so let us eat! :D

Ingredients:
1 kilo fish (cleaned and cut)
2 lemon or 8 calamansi
salt

Procedure:
1.  Squeeze the lemon or calamansi juice into the fish then sprinkle with salt.
2. Heat the oil in a pan ( wait for the oil until its very hot so that the fish will not stick in the bottom of the frying pan) then deep fry the fish adjust the heat to medium so that the inner part will be cooked evenly then when it is almost done, increase the heat to high to make the fish crispy and golden brown.
3. Serve it with your favorite side dish or sauce.

How to Cook Tapioca Pearls

I have received emails asking me how to cook tapioca pearls because when they cooked it, the result was not good.
So here is the simple and perfect way of cooking tapioca pearls.

We need:
1/2 kilo Tapioca pearls
3 litres water
uncooked tapioca


Procedure:
1 Put the water in a pot then bring to a boil.
2 When it is boiling, pour the tapioca  and stir very well to avoid it from sticking to each other.


3. Stir occasionally  while simmering until the tapioca pearls are all transparent, this means it's already cooked. Approximately 1 hour.


4. Turn off the heat, then drain and wash in running water.

This is now ready to be used for your recipes

How to Cook Sunny Side up Egg

I needed to cook 30 pieces of sunny side up eggs for breakfast, hmmmmm  I hope I will cook it right, after cooking I've said to myself " this i not perfect" but then I said to myself again " It's okay, sometimes the sun is not always bright, it's covered with clouds" then I smiled and confident, I needed that smile to face my guests who will be arriving by a bus very soon.

To cook the egg, it is better to use a non-stick frying pan, if it's not available then ordinary frying pan is just fine.
Make sure that the oil or butter is hot before putting the egg.
Once the oil is hot sprinkle some salt in the oil ( just enough to give flavor to the egg) crack the egg into the pan.
Cook the egg over low heat, then remove the egg when it is already cooked the way you like it.




Serve it with a sunny smile :)







How To Make a Garlic Cream


A tangy tasted cream/sauce that goes well with meat, bread, and fries, it's very easy to make so I hope that you will try this.

ingredients
2 cloves garlic
1/2 cup milk
 Pinch of salt
 1/2 cup oil

Procedure:
1.Put the milk, salt and garlic in a blender, then blend until garlic is pureed.
 2. Turn on the blender and slowly add the the oil, then continue to blend until the texture is creamy like a yoghurt . ( If it is not forming into a cream add more oil until you attain that texture.
3. Keep in a jar and refrigerate, you can use this as a condiment for your meats, pasta, breads, etc.
