How to Cook Tapioca in 10 Minutes

I've already shown how to cook tapioca perfectly , but due to lots of questions I received about cooking tapioca, I tried some experiment on how to cook it in a shorter period of time to avoid consuming too much gas or electricity I was amazed by the result that it worked this way.

Ingredients:

1/2 kilo tapioca
 5 litres water

Procedure:
1. Put the water in a big pot then bring to a boil, when it is boiling increase to high then drop the tapioca while stirring the water to avoid it from sticking to each other. Let simmer for 10 minutes while stirring occasionally.
2. After  10 minutes turn off the heat, and just leave it covered for 2 hours, without opening it so that the heat will continue cooking the tapioca.
3 After 2 hours and it's already transparent, drain it and wash with water and use your hand to separate the lumps. Drain and this is now ready to be used for different recipes.




Stir Fried Shrimps and Mushrooms

Shrimps can be cooked quickly that's why when my 2 friends arrived yesterday, just in time for my dinner, I cooked this and invited them to join me. We had a good dinner with this dish together with egg omelette and rice :-).

Ingredients for 3 servings:
1/4 kilo shrimps
4 pieces fresh button mushroom ( sliced)
3 cloves garlic
1/4 piece bell pepper
salt and pepper to taste

Procedure:
1. Saute the garlic then increase the heat to high and add the mushrooms and stir fry for a minute.
2. Add the bell pepper,shrimp, salt and pepper then continue to stir fry for 3 minutes or until done then turn off the heat.
3. Sprinkle with spring onion then serve with a smile :-) .

Chicken Tanglad


A simple chicken dish that's budget friendly and smells just like tinola because of the lemon grass. Have you tried this before?

Ingredients for 4 servings:

1/2 kilo chicken
1 big stalk lemon grass ( tanglad) Tied
1 small onion
2 cloves garlic
3 cups water ( add if needed)
salt and pepper to taste
spring onion for garnishing

Procedure:
1. Saute the garlic and onion then add the chicken and braised it until it's a little brownish, then add the water, salt, pepper and tanglad, bring to a boil then simmer until the meat is fully cooked then turn off the heat.
2. Garnish with spring onion and serve it hot and enjoy the aromatic sauce.



Mely's Kitchen Pork and Chicken Adobo

I need to feed 20 persons that's why I put an egg as an extender to my pork and chicken adobo since I do not have carrots and potatoes. Nothing's left after the dinner and my friend's were satisfied. :-).

Ingredients:
1 kilo chicken
1 kilo pork
2 dozens cooked quail's egg
1 cup soy sauce
1 cup vinegar
4 cloves garlic
1 small onion
1 small bell pepper

Procedure:
1. Saute the garlic and onion then add the chicken, pork, ground pepper, vinegar and soy sauce, . Cover and let simmer for 5 minutes over medium heat. After 5 minutes, stir and mix well, continue to simmer until the meat is tender.


3. Continue to simmer until fully cooked, then increase the heat to make the sauce thicker then turn off the heat, put the eggs and serve.


Tipid Lumpia


This spring roll is very economical yet yummy, I cooked this for my friends who are practicing their program presentation when I visited them, so I volunteered to prepare them something to eat. They were surprised how I made lots of lumpia with just few ingredients :-).

Ingredients for 30 pieces regular size shanghai:
30 pieces Lumpia wrapper
1/4 kilo potato
1 big carrot
1 big onion
3/4 cup ground beef
3/4 cup flour
2 beaten eggs
chopped spring onion ( according to your taste)
1/4 teaspoon ground pepper
salt to taste

Procedure:
1. Shred the carrot, potato and onion, then mix with ground meat, eggs, flour, pepper, spring onion and salt.


2. Wrap in a spring roll wrapper then deep fry until golden brown.



3 Serve it hot.


Macaroni Tapioca Salad

There were lots of kids in the church today practicing a dance, that's why I invented this so that they can have a snack after their practice, they were so excited when they have tasted it, they were surprised how yummy it is.

Ingredients for 24 servings:
1/4 kilo tapioca pearl ( cook according to its packaging procedure) drained
1/4 kilo elbow macaroni ( cook according to its packaging procedure) drained
1 pack red unflavored gelatine (10 grams) Cooked and diced)
1 cup pineapple tidbits
3 cups condensed milk
3 cups Nestle cream/ all purpose cream
3/4 cup diced cheese
1 1/2 cup raisins
1 cup corn kernel

Procedure:
1. Combine all the ingredients and mix well, then refrigerate for few hours.

2. Serve with a smile :-).

Hot and Spicy Pork Adobo



An adobo cooked by my friend, which he served to us when we visited him, while we were eating I told him that I would love to post it because it's so yummy I almost forgot my problem lol. The tangy taste of vinegar and soy sauce was just perfect. Thank you Mr. Rupert for allowing me to post this.


Ingredients:
1/2 kilo pork
4 pieces hot dog ( slice to your desired size)
2 big potatoes ( sliced into quarter)
1/2 cup soy sauce
1/2 cup vinegar
1/4 teaspoon sugar
1/4 teaspoon ground pepper
1/4 teaspoon ground laurel / bayleaf
1 cup water
6 pieces chili pepper or labuyo
4 cloves garlic

Procedure:
1. Saute the garlic then add the pork and braise for few minutes until the natural juice comes out.
2. Add the soy sauce, sugar, ground pepper, laurel and chili then simmer for 3 minutes then add the water, simmer until the meat is tender.
3. Add the potato, simmer until tender then add the hot dog and vinegar, simmer until cooked.
4. When everything is done, increase the heat to high allowing the sauce to boil and becomes thick, then turn off the heat.
5. Serve hot with a smile.

Rice Puto With Cheese


Perfect for a snack, simple and easy to cook.

Ingredients for 8 servings:
1 cup rice flour ( giniling na bigas)
1 1/2 teaspoons baking powder
3/4 cup coconut milk
1 egg beaten
pinch of  salt
1/2 cup sugar
some cheese for toppings

Procedure:
1. Sift together the flour, baking powder, salt and sugar, then pour the coconut milk and egg then  mix well, until the batter is smooth in texture.
2. Put the banana leaves into the molder properly, then pour the batter around 3/4 full. ( If banana leaves is not available just grease the molder before pouring the batter.)
3.Steam for 35 minutes  then put the cheese and continue to steam until it's done.
4. Serve anytime you want it.

Sardines Bread Pizza


I prepared this for some friends and they loved it so much. I added liquid cheese for extra flavor.

Ingredients for 5 servings:
10 slices bread
2 cans sardines in tomato sauce ( drained)
1 1/2 cup tomato sauce
1/2 teaspoon sugar
1 onion minced
2 tablespoons Nestle Cream
salt and pepper to taste
1/2 cup grated cheese

Procedure:
1.Preheat the oven at 180C. Then bake the bread slices for 3 minutes, then take out from the oven and set aside
2. Saute the onion then add the drained sardines, simmer for a minute.
3. Add the tomato sauce, sugar, salt and pepper then simmer for 2 minutes, add the Nestle cream, stir and turn off the heat.
4. On the baked bread, spread the sauce evenly, sprinkle with cheese then bake for 5 minutes or until the cheese is melted.

5. Serve with love :-).


You can top it with melted cheese for extra flavor.

Simple Rice Salad


Easy to prepare yet yummy and satisfying. I ate this during my lunch, I just partnered it with pork crackling :D Excellent! Better and healthier than fried rice. Try it.

Ingredients for 2 servings:
1 1/2 cup cooked rice
1/4 piece avocado medium size ( diced)
1/2 piece apple Medium size ( diced)
1/2 cup Pineapple tidbits
1 medium size tomato
1 tablespoon diced yellow bell pepper
1 tablespoons diced red bell pepper
1 tablespoon lemon juice
salt and pepper to taste

Procedure:
1. Combine all the ingredients and mix well.


2. Chill or serve right away  with spring onion. :-).




Pork and Shrimp Siomai

After making my siomai wrapper I want to test it, so I made this pork and shrimp siomai, the result about the wrapper is fine. The siomai is yummy with additional tangy flavor from the shrimps, you will surely ask for more.

Ingredients:
1/4 kilo ground pork
12 siomai wrapper ( click here and learn to make siomai wrapper)
12 cleaned deshelled shrimps
1 onion ( minced)
5 cloves garlic ( minced)
1/2 carrot ( minced)
1/4 cup flour
1/4 teaspoon ground pepper
salt to taste


Procedure:

1. Set aside the wrapper then mix all the ingredients very well.

2. Spoon a portion then wrap with the siomai wrapper
3. After wrapping insert the shrimp in the center, when the steamer is already boiling out the siomai and steam for 30 minutes or until done.
4. Serve and do not forget to smile :-).


How to Make Pizza Crust


Do you love making pizza? Make your own pizza crust and enjoy a delicious crunchy crust pizza that better than bought ones. Here is a simple way to make a pizza crust.

Ingredients
1/2 kilo all purpose flour
5 grams instant dry yeast
2 cups lukewarm water ( add if needed) only lukewarm not HOT because it will kill the yeast
2 tablespoon olive oil or any cooking oil
1 teaspoon salt
extra flour for dusting

Procedure:
1. Combine the yeast, salt, oil and flour then mix well, add the water gradually until you form a dough, knead until it is smooth and elastic. Then put in a bowl and cover, let rest in a room temperature for an hour or until doubled in size.

2. In your working place, dust it with flour to prevent the dough from sticking. Cut into 4 parts ( or 3 parts if you want bigger pizza crust) then knead and form into a ball and let it rise for 30 minutes. After 30 minutes use a rolling pin and flatten the dough.


3. This is now ready to be used for pizza. You can use it right away or bake for 6 minutes at 180C then wrap in a plastic wrapper and refrigerate for future use.

Mely's Kitchen Chicken Macaroni Salad

Simple version but still yummy.

Ingredients for 12 servings:
1/2 kilo elbow macaroni
1/4 kilo chicken breast ( cooked and tshredded)
2 cups Nestle cream/all purpose cream
1/2 cup minced carrots
1/4 cup minced red onion
1 pack mayonaise (200 or 250 grams)
1 apple ( diced)
1 cup pineapple tidbits
1 cup raisins
sugar to taste

Procedure:
1. Cook the elbow macaroni according to its packaging procedure. (drained )
2. Mix all the ingredients.
3. Chill or put in the refrigerator before serving.



Eggplant Omellette (Tortang Talong)


I have lots of friends who do not like eggplant because they said it is not yummy and there is no flavor at all.
 Well, I do not agree because if you know how to cook it, it is yummy, it goes well with other ingredients.
The recipe that I liked for eggplant is tortang talong or eggplant omellette like the one in the picture that's shared to us by Miss Gloria Resurreccion.


Ingredients:

6 eggplants
3 eggs
1/4 cup flour
salt and pepper to taste


Procedure:
1. Grilled the eggplant or boil until it is cooked. 
2. Remove the skin and flatten it. Set aside.
3. In a bowl beat the eggs, add the flour, salt and pepper, mix will.
4.Put the eggplant in the mixture,  coat it well, and fry it.
5. Serve it hot.

Simple Bibingka With Cheese

A delicious bibingka with cheese that will boosts your appetite when you smell its aroma, mmmmm yummy.

Ingredients for 4 servings:
1 cup all purpose flour
1 egg ( beaten)
2 teaspoons baking powder
3/4 cup sugar
3/4 cup fresh milk
pinch of salt
some cheese for toppings
wilted banana leaves

Procedure:
1. Sift together the flour, sugar, baking powder and salt, set aside.
2.Pour the milk to the sifted ingredients then mix well,  add the beaten eggs and mix  until fully combined and smooth.
3. Put a wilted banana leaves in the molder that you are going to use then fill it with the bibingka mixture up to 3/4 full, and bake for 25 minutes or until done in a pre-heated oven at 180C.
4. After 25 minutes top it with cheese and continue baking for 5 minutes and turn off the heat.
5.Serve with a smile.

Pork Broccoli


I cooked this dish from a friends request. I made it simple and budget friendly, but still it is yummy. I hope you will like it.


Ingredients for 3 servings:
1 head of broccoli (regular size)
1/4 kilo pork
2 tablespoons soy sauce
1 onion
3 cloves garlic
2 cups
1 1/2 teaspoon corn starch dissolve in 1 tablespoon water
salt and pepper to taste

Procedure:
1. If the pork that you will use has fats,  toast the fats then saute the garlic and onion.
2. Put the rest of the pork together with the soy sauce and simmer for a minute.

3. Add the water and bring to a boil.
4. Increase the heat then add the broccoli stirring constantly until it is half cooked then add the dissolved corn starch, salt and pepper then simmer until cooked.


5. Serve it hot.




How to make Siomai Wrapper


This is very simple and easy to make so do not be afraid to try. This recipe will yield more than 20 regular size of wrapper.

Ingredients:
2 cups flour
1 egg
3/4 tsp. salt
1/2 cup water

Procedure:
1. Sift the flour and salt into a mixing bowl and make a well at the center.
2. Put the egg and water in the well and  mix together until the mixture will be a firm dough by kneading it well. Smooth and firm not sticky.




3. Let rest for 45 minutes to allow the gluten to relax making the dough easier to roll out.
4. Sprinkle corn starch or flour on the space where you will knead the dough, after 45 minutes divide the dough into halves, then use a rolling pin and knead the dough then flatten it as thin as you can to make the siomai wrapper. While still working on the first half cover the other half to avoid it from drying.





5. Trim the sides to make a big square or rectangle then cut it into siomai wrappers.



6. Then file the wrappers with cellophane in between to avoid it from sticking. This is now ready to be used for, molo soup, wanton soup, siomai, etc.
